My kid friendly energy bites go down a treat in our home and do not last long and they couldn’t be simpler with just three steps.
You’ll need a small food processor to make these.
Ingredients
1 cup pitted dates
1/2 cup almond butter (we prefer smooth)
1/2 cup raw almonds
1/2 cup dedicated coconut plus extra to roll the bites in afterwards.
Method
Step 1
Measure out the ingredients and place into a food processor.
Step 2
Grab small handfuls of the mixture and roll into balls using all of the mixture. If the mixture feels dry, you can add more almond butter and/or pitted dates.
Step 3
Roll in the extra coconut as desired.
