Sweet Potato and Roasted Cashew Moroccan Dip

Ingredients:

  • 2 large sweet potatoes
  • 1 cup cashews, roasted
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Juice of 1 lemon or lime
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh coriander, chopped (for garnish)

Instructions:

  1. Roast the Sweet Potatoes:
    • Preheat your oven to 200°C (400°F).
    • Place sweet potatoes on a baking tray. Roast in the oven for about 45 – 60 minutes or until tender and fully cooked. Allow them to cool, then peel and place the flesh in a food processor.
  2. Prepare the Cashews:
    • If not already roasted, spread the cashews on a baking tray and roast in the oven at 180°C for about 10 minutes or until golden and fragrant. Allow them to cool before adding to the food processor. You can also quickly roast them in a dry fry pan on the hob, be sure to keep tossing them so they do not burn.
  3. Make the Dip:
    • To the food processor, add the roasted sweet potato flesh and cashews along with the minced garlic, cumin, smoked paprika and lemon or lime juice. Blend until smooth.
    • While blending, gradually add the olive oil until the mixture is creamy and well-combined. Season with salt and pepper to taste.
  4. Garnish and Serve:
    • Transfer the dip to a serving bowl. Garnish with chopped fresh coriander and a drizzle of olive oil.
    • Serve with a selection of crudité, pita bread, or crackers for dipping.
