- Add any vegetables you have, I grate as many in for the children such as beetroot, swede, Zucchini, tomatoes, cauliflower or broccoli stems.
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 100g frozen peas
- 1 teaspoon thyme or rosemary
- 300ml beef stock, liquid or cube in water
- Salt and pepper, to taste
For the Mash Topping:
- 300g sweet potatoes, peeled and cut into quarters
- 300g potatoes, peeled and cut into quarters
- 50ml milk (or a dairy-free alternative)
- 25g butter (or a plant-based alternative)
- Salt and pepper, to taste

Instructions:
- Prepare the Filling:
- Heat the olive oil in a large frying pan over medium heat. Add the onions, carrots, and garlic, sautéing until softened.
- Stir in the shredded corned beef and frozen peas. Add the rosemary or thyme and cook for an additional 2 minutes.
- Pour in the beef stock, bring the mixture to a boil, then reduce the heat and simmer gently for 10 minutes until most of the liquid has reduced. Season with salt and pepper to taste.
- Make the Mash Topping:
- While the filling is cooking, place the sweet potatoes and potatoes in a large pot of boiling salted water. Cook until tender, about 15-20 minutes.
