  • 500g corned beef (silverside), cooked and shredded
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • Add any vegetables you have, I grate as many in for the children such as beetroot, swede, Zucchini, tomatoes, cauliflower or broccoli stems.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 100g frozen peas
  • 1 teaspoon thyme or rosemary
  • 300ml beef stock, liquid or cube in water
  • Salt and pepper, to taste

For the Mash Topping:

  • 300g sweet potatoes, peeled and cut into quarters
  • 300g potatoes, peeled and cut into quarters
  • 50ml milk (or a dairy-free alternative)
  • 25g butter (or a plant-based alternative)
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Filling:
    • Heat the olive oil in a large frying pan over medium heat. Add the onions, carrots, and garlic, sautéing until softened.
    • Stir in the shredded corned beef and frozen peas. Add the rosemary or thyme and cook for an additional 2 minutes.
    • Pour in the beef stock, bring the mixture to a boil, then reduce the heat and simmer gently for 10 minutes until most of the liquid has reduced. Season with salt and pepper to taste.
  2. Make the Mash Topping:
    • While the filling is cooking, place the sweet potatoes and potatoes in a large pot of boiling salted water. Cook until tender, about 15-20 minutes.
    • Drain well and return to the pot. Add the milk and butter, mashing until smooth and creamy. Season with salt and pepper.
  3. Assemble the Pie:
    • Preheat your oven to 200°C (180°C fan assisted).
    • Transfer the filling into a baking dish. Evenly spread the mashed potato mixture on top of the filling, using a fork to create a textured surface. Add cheese on top for extra flavour.
    • Place the dish in the oven and bake for 20-25 minutes, or until the topping is golden and crisp.
  4. Serving:
    • Let the pie stand for a few minutes before serving. This allows the filling to settle, making it easier to serve.
