1. Leftover Roast Chicken Soup

Ingredients:

  • Leftover roast chicken, shredded
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery sticks, sliced
  • 2 garlic cloves, minced
  • 1 litre chicken stock
  • 1 bay leaf
  • Fresh parsley, chopped
  • Salt and pepper, to taste

Instructions:

  1. In a large pot, sauté the onion, carrots, celery, and garlic until softened.
  2. Add the chicken stock, bay leaf, and shredded chicken. Bring to a boil.
  3. Reduce the heat and simmer for 20 minutes.
  4. Season with salt and pepper, and garnish with fresh parsley before serving.

NB: remember that this is embracing leftovers so if you dont have an ingredient listed you can substitute. For a more filling soup I add soup lentils or risoni pasta.

2. Veggie-Packed Fried Rice

Ingredients:

  • Leftover rice
  • Mixed leftover vegetables (such as peas, carrots, bell peppers, and broccoli), chopped
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • 1 spring onion, sliced
  • ½ tea spoon of cumin and ½ teaspoon of ground coriander

Instructions:

  1. Heat the sesame oil in a large pan and sauté the garlic until fragrant.
  2. Add the chopped vegetables and cook until tender.
  3. Push the vegetables to one side of the pan and scramble the beaten eggs on the other side.
  4. Add the leftover rice, cumin, coriander and soy sauce, mixing everything together until heated through.
  5. Garnish with sliced spring onion and serve hot.

3. Mashed Potato Cakes

Ingredients:

  • Leftover mashed potatoes
  • 1 egg
  • 1/2 cup grated cheese
  • 2 tablespoons flour
  • 1 spring onion, chopped
  • Salt and pepper, to taste
  • Olive oil, for frying

Instructions:

  1. In a bowl, mix the leftover mashed potatoes with the egg, grated cheese, flour, and spring onion.
  2. Season with salt and pepper.
  3. Shape the mixture into small patties.
  4. Heat olive oil in a pan and fry the patties until golden brown on both sides.
  5. Serve hot with a dollop of sour cream or yoghurt.

4. Leftover Pie

Ingredients:

  • Leftover meat (such as chicken, beef, or lamb), shredded or chopped
  • Leftover vegetables (such as peas, carrots, and green beans), chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup gravy or sauce
  • 1 sheet puff pastry
  • 1 egg, beaten
  • Salt and pepper, to taste
  • Fresh herbs (such as parsley or thyme), chopped

Instructions:

  1. Preheat the oven to 200°C.
  2. In a large pan, sauté the onion and garlic until softened.
  3. Add the leftover meat and vegetables to the pan, and mix in the gravy or sauce. Season with salt, pepper, and fresh herbs.
  4. Transfer the mixture to a pie dish.
  5. Cover the pie dish with the puff pastry, trimming any excess and pressing the edges to seal. Cut a few slits in the top to allow steam to escape.
  6. Brush the pastry with the beaten egg.
  7. Bake for 25-30 minutes, or until the pastry is golden brown and crisp.
  8. Allow to cool slightly before serving.

5. Quiche Lorraine with Leftover Vegetables

Ingredients:

  • Leftover vegetables (such as spinach, mushrooms, and bell peppers), chopped
  • 1 pre-made pie crust
  • 200g bacon, chopped ( I buy coking bacon to save on the budget)
  • 1 onion, diced
  • 3 eggs
  • 1 cup milk or cream
  • 1 cup grated cheese
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 190°C.
  2. In a pan, cook the bacon and onion until the bacon is crispy and the onion is soft.
  3. In a bowl, whisk together the eggs, milk or cream, grated cheese, salt, and pepper.
  4. Add the cooked bacon, onion, and chopped leftover vegetables to the egg mixture.
  5. Pour the mixture into the pre-made pie crust.
  6. Bake for 35-40 minutes or until the quiche is set and golden brown.
  7. Allow to cool slightly before serving.
