Delicious Chicken Drumstick Tagine on a Budget

Delicious Chicken Drumstick Tagine on a Budget

A chicken tagine is one of those dishes that feels luxurious and full of depth, yet it’s surprisingly easy and affordable to make. Using chicken drumsticks, dried apricots, and chickpeas, this version delivers all the rich Moroccan-inspired flavours without breaking the bank.

Tagines are traditionally slow-cooked in an earthenware pot, but you can easily make this dish in a heavy-based pot, Dutch oven, or even a slow cooker—and the result is just as good!

Why This Recipe Works on a Budget

✔️ Chicken drumsticks are one of the most affordable cuts of meat while staying juicy and full of flavour.
✔️ Dried apricots & chickpeas add richness and bulk, making this a filling, protein-packed meal.
✔️ Warm spices & aromatics turn simple ingredients into something special.
✔️ One-pot cooking means fewer dishes and an easy, hands-off approach!

How to Make It

1️⃣ Brown the Chicken

  • Heat olive oil in a large pot over medium heat.
  • Add chicken drumsticks and cook for 5 minutes, turning to brown all sides.
  • Remove and set aside.

2️⃣ Sauté the Aromatics & Spices

  • In the same pot, add the onion and garlic. Cook for 3 minutes until soft.
  • Stir in the cumin, cinnamon, ginger, paprika, turmeric, salt & pepper—toast for 30 seconds to release the flavours.

3️⃣ Build the Flavour

  • Add tomato paste and stir to coat the onions.
  • Pour in the chopped tomatoes, chickpeas, and stock. Stir well.
  • Add the dried apricots and any extra veggies like carrots or zucchini.

4️⃣ Simmer Until Tender

  • Nestle the chicken drumsticks back into the pot.
  • Bring to a gentle simmer, cover, and cook for 40–50 minutes, stirring occasionally, until the chicken is fall-apart tender and the sauce has thickened.

5️⃣ Serve & Enjoy

  • Sprinkle with fresh coriander or parsley.
  • Serve over couscous, rice, or with warm flatbreads.
  • For extra texture, sprinkle with toasted almonds or sesame seeds.
