Making the Most of Our Organic Sausages: Easy, Wholesome Meals for Busy Days

As we progress with our homestead, some of the organic meat has arrived in bulk. So whilst we’ve frozen a lot down, I’m also making meals for those busy days and late kids’ sports nights—something we can just throw in the oven or pan without much thought.

We’ve ended up with a good supply of beef sausages, but these ideas work just as well with pork, chicken or a mix if you’re blending batches or using what’s already in the freezer. Sausages are one of those versatile staples—familiar, family-friendly, and easy to prep ahead. And best of all, they can stretch a long way in creative meals that feel anything but boring.

Here are some of our go-to ways to make sausages work hard in the kitchen:


1. Beef Sausage & Veggie Tray Bake

This is one of those fail-safe dinners that practically cooks itself. Slice the sausages and roast with seasonal veg like red onions, sweet potato, zucchini, cherry tomatoes, and capsicum. Toss with olive oil, garlic, rosemary or thyme, and bake until golden and bubbling. Serve with couscous, mash, or a simple garden salad.

Make ahead tip: Roast the veg and par-cooked sausages earlier in the day, then simply reheat for a fast, flavour-packed dinner.


2. Hearty Sausage, White Bean & Kale Stew

This stew is a one-pot wonder, ideal for the slow cooker or stovetop. Start by browning the sausages (leave whole or chop), then simmer with garlic, tinned tomatoes, cannellini beans, herbs, and shredded kale or spinach. It’s nourishing, freezer-friendly, and gets better the next day.

Garden swap: Use broad beans or silverbeet if they’re growing in your patch.


3. Sausage Pasta Bake with Hidden Veg

Great for clearing out the fridge. Combine sliced sausages with a tomato-based sauce, cooked pasta, and a handful of cheese. Add in grated zucchini, diced mushrooms or leftover roast veg to sneak in some extra goodness. Bake until bubbly and golden on top.

Optional twist: Stir through a spoonful of pesto or chilli flakes for grown-up flavour.


4. Sausage & Lentil Bake

A rustic, protein-rich dish that’s as comforting as it is cost-effective. Layer browned sausages over a tray of cooked lentils, diced veg (carrot, celery, leek), and a tomato base. Top with a few breadcrumbs and bake until the sausages are crisp and the lentils have soaked up all the juices.

Freezer friendly: Cool completely and portion up for heat-and-eat lunches.


5. Sausage & Brown Rice Stuffed Peppers

A colourful way to use up leftover cooked rice. Mix chopped sausages with brown rice, tomato paste, herbs, and finely chopped veggies. Stuff into halved capsicums, top with a sprinkle of cheese or seeds, and bake until soft.

Batch idea: These keep well for 2–3 days in the fridge—easy to grab and go.


6. Quick Sausage & Egg Fried Rice

A brilliant one for using up small amounts of sausage. Slice thinly and fry with garlic, spring onions, peas, and leftover rice. Push everything to one side and scramble in a couple of eggs before tossing together. Add tamari or soy sauce to taste.

Add-ons: Grated carrot, shredded spinach or finely chopped cabbage all work a treat.


7. Sausage & Spinach Frittata

Simple, filling and perfect for a light dinner or lunchbox leftovers. Fry sliced sausages with onion and garlic, then pour over beaten eggs and stir in spinach or herbs. Bake or cook on the stove until set.

Serve with: A green salad or roasted cherry tomatoes.

Having a few of these meals prepped and ready means dinner is never too far away—even when the afternoon gets away from us. Whether it’s a hearty stew pulled from the freezer or a tray bake ready to slide into the oven, these sausage-based meals help us make the most of our homestead harvests and busy family life.
