Freezer & Pantry Friday: Clear-Out Curry Night

We’ve all had those weeks where the fridge is looking bare, the kids are hungry, and the last thing you want is another trip to the shops. That’s when a clear-out curry night comes to the rescue. With a few freezer staples, a tin or two from the pantry, and some garden (or market) greens, you can have a warming, family-friendly curry on the table in under 30 minutes.

The Base

  • Frozen chicken pieces – thighs or breast both work well; just defrost quickly or cook from frozen if needed.
  • Coconut milk – creamy and perfect for balancing spices.
  • Pantry spices – curry powder, turmeric, cumin, paprika, or even a pre-made spice blend.
  • Onions and garlic (if you have them on hand) – add depth of flavour.

Add-Ins

This is where the clear-out magic happens. Raid your freezer and pantry for whatever needs using:

  • Winter greens such as spinach, kale, or silverbeet – fresh or frozen.
  • Frozen peas or beans – bulk it out and add extra fibre.
  • Tinned tomatoes – if coconut milk alone feels too rich, add a tin of chopped tomatoes.
  • Chickpeas or lentils – for a protein boost and stretch the meal further.

Quick Method

  1. Heat a splash of oil in a large pan. Add onion and garlic (if using) until fragrant.
  2. Stir in curry powder and spices. Let them bloom for a minute.
  3. Add chicken pieces and cook until browned.
  4. Pour in coconut milk (and tinned tomatoes if using). Simmer gently.
  5. Add in winter greens, frozen veg, or legumes until everything is cooked through.
  6. Taste and adjust seasoning – a squeeze of lemon or lime at the end lifts the flavour.

To Serve

  • Spoon over steamed rice or serve with flatbreads from the freezer.
  • Add a dollop of yoghurt or raita if you’ve got it.

Why It Works

This type of meal is flexible, forgiving, and saves money by using what you already have. It’s also a great way to get kids comfortable with spice by adjusting the heat level – keep it mild for family meals, or serve chilli flakes on the side for adults.
