I’ve never considered myself particularly frugal. I don’t visit five different supermarkets chasing discounts, and I don’t enjoy wasting time hunting down the cheapest possible ingredient.
What I do dislike is seeing good food go to waste.
Growing up, and now feeding my own family, there was always a “there’s another meal in that” mentality. A roast chicken became soup. Leftover vegetables found their way into a frittata or Sunday shakshuka. Herbs from the garden were turned into pesto, sauces and seasonings rather than left to wilt.
Around here, we call them Bitsa Meals — bits of this and bits of that turned into dinner.
Sometimes it’s the odds and ends in the crisper drawer. Sometimes it’s a handful of herbs from the garden. Sometimes it’s a chicken carcass that’s not quite finished with us yet.
