Kid-Friendly Tacos: A Quick and Easy Weeknight Dinner

Tacos are a fun and versatile meal that the whole family can enjoy. This kid-friendly version is simple to make and can be customised to suit your child’s tastes. With flavourful beef mince, melted cheese, crisp lettuce, and optional vegetables, these tacos are sure to be a hit with kids and adults alike. Let’s get cooking:

Ingredients:

  • 500g beef mince
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 packet taco seasoning mix (I use paprika, cumin, ground coriander)
  • 1/2 cup water
  • 8 small taco shells or small wraps
  • 1 cup grated cheese
  • 1 cup shredded iceberg lettuce
  • Optional toppings: diced capsicum, diced cucumber, diced tomato

Instructions:

  1. Heat the olive oil in a large frying pan over medium heat. Add the onion and garlic and cook for 2-3 minutes, or until softened.
  2. Add the beef mince to the pan and cook, breaking it up with a wooden spoon, until browned.
  3. Stir in the taco seasoning mix and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.
  4. While the beef is cooking, prepare your taco shells according to the packet instructions.
  5. Once the beef is cooked, assemble your tacos. Spoon the beef mixture into each taco shell, then top with grated cheese, shredded lettuce, and any optional toppings you like.
  6. Serve the tacos immediately, with extra toppings and sauces on the side if desired.

Variations:

  • For a healthier option, use lean beef mince and whole grain taco shells.
  • Add other toppings like sour cream, guacamole, or salsa for extra flavor.
  • Use chicken mince or turkey mince instead of beef for a different twist.
