Ingredients:

  • 500 grams of Greek yoghurt (or any plain yoghurt of your choice)
  • 2 tablespoons of honey (or to taste)
  • 1 teaspoon of vanilla extract
  • 1/2 cup of mixed berries (such as strawberries, blueberries, and raspberries)
  • Optional toppings: chopped nuts, chocolate chips, granola, chia seeds or coconut flakes

Equipment:

  • A mixing bowl
  • A spatula
  • A baking tray or a large flat dish
  • Parchment paper
  • Ice lolly sticks/bar mould

Instructions:

  1. Prepare the Fruit:
    • Wash and dry your berries. If using strawberries, remove the stems and cut them into small pieces. You can leave blueberries and raspberries whole or slice them if they are large.
  2. Mix the Yoghurt Base:
    • In a mixing bowl, combine the Greek yoghurt, honey, and vanilla extract. Stir until the honey is completely dissolved and the mixture is smooth. Taste and adjust the sweetness as needed.
  3. Add the Fruit:
    • Gently fold the mixed berries into the yoghurt mixture. If you’re using other toppings like nuts or chocolate chips, add them now.
  4. Prepare the Tray:
    • Line your baking tray or dish with parchment paper. This prevents the yoghurt from sticking and makes it easier to remove the bars once frozen.
  5. Spread the Mixture:
    • Pour the yoghurt mixture onto the lined tray. Spread it out evenly with a spatula to about 1/2 inch thickness. Ensure that the fruit and any additional toppings are distributed evenly.
  6. Insert the Sticks:
    • Place ice lolly sticks at regular intervals to create individual bars if you are using them. Make sure they’re spaced enough so that each bar will have an adequate amount of fruit and toppings.
  7. Freeze:
    • Place the tray in the freezer and freeze for at least 4 hours, or until the yoghurt is completely firm.
  8. Serve:
    • Once frozen, remove the tray from the freezer. Lift the parchment paper to transfer the frozen slab onto a cutting board. Break or cut between the sticks to form individual bars. Serve immediately or store in a freezer-safe container for later use.
