I love pasta. Good pasta. Not just any pasta. There’s something deeply satisfying about a bowl of well-cooked pasta—whether it’s silky strands coated in garlic and olive oil or a rich, comforting sauce that clings to every bite.
But it hasn’t always been so easy for me. Back when I was gluten intolerant, I tried every gluten-free pasta alternative on the market. Thirteen years ago, gluten-free pasta options were few and far between, and let’s be honest—they weren’t great. The texture was often off, the taste wasn’t quite right, and they never seemed to hold up well in a sauce.
Thankfully, things have changed. These days, you can substitute a good pasta recipe with a gluten-free version and actually enjoy it. There are high-quality options made from brown rice, chickpeas, lentils, and even quinoa that hold their shape and texture beautifully.
But regardless of whether you’re eating traditional or gluten-free pasta, one thing remains the same: The key to a good pasta dish is not to overcomplicate it. A bit of butter, parmesan, and a good herb with your favourite protein or vegetable is all you need. Keep it simple, use quality ingredients, and let the flavours shine.
Here are some of my favourite simple pasta recipes that prove less is more when it comes to making a great bowl of pasta.
1. Kale & Garlic Pasta (Simple, Fresh & Nourishing)
A quick, easy dish that highlights garlic, olive oil, and hearty kale—a perfect midweek meal.
Ingredients:
- 250g spaghetti or linguine (regular or gluten-free)
- 2 tbsp olive oil
- 3 cloves garlic, sliced
- 2 cups kale, chopped
- ½ tsp chilli flakes (optional)
- ¼ cup parmesan, grated
- Salt & black pepper, to taste
Method:
1️⃣ Cook the pasta in salted boiling water until al dente. Reserve ½ cup of pasta water.
2️⃣ Heat olive oil in a pan, add garlic and cook until fragrant.
3️⃣ Toss in kale and sauté for 3 minutes until wilted. Add chilli flakes if using.
4️⃣ Add the drained pasta and a splash of pasta water to create a light sauce.
5️⃣ Stir in parmesan, season with salt and pepper, and serve immediately.
Optional: Top with toasted pine nuts for extra crunch!
2. Tuna & Caper Pasta (A Quick Pantry Staple)
A classic, salty, umami-packed dish that comes together in minutes.
Ingredients:
- 250g spaghetti or fusilli
- 1 tbsp olive oil
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 can tuna in olive oil, drained
- 1 tbsp capers
- Juice of ½ a lemon
- ¼ cup parsley, chopped
- Salt & black pepper, to taste
Method:
1️⃣ Cook pasta until al dente, reserving ½ cup pasta water.
2️⃣ In a pan, heat olive oil and sauté onion & garlic until soft.
3️⃣ Add tuna & capers, breaking the tuna into chunks.
4️⃣ Toss in pasta, adding a splash of pasta water to bring it together.
5️⃣ Stir in lemon juice & parsley, season to taste, and serve.
Optional: Sprinkle with chilli flakes for a spicy kick!
3. Mushroom & Garlic Pasta (Rich, Earthy & Delicious)
Perfect for mushroom lovers—garlic, butter, and mushrooms create an irresistible sauce.
Ingredients:
- 250g tagliatelle or fettuccine
- 2 tbsp butter
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced (portobello, button, or mixed)
- ¼ cup white wine (or extra pasta water)
- ½ cup parmesan, grated
- Salt & black pepper, to taste
Method:
1️⃣ Cook pasta in salted water until al dente. Reserve ½ cup pasta water.
2️⃣ In a pan, melt butter, add garlic, then mushrooms. Sauté until golden.
3️⃣ Deglaze the pan with white wine and let it reduce slightly.
4️⃣ Toss in pasta, adding reserved pasta water to create a light sauce.
5️⃣ Stir in parmesan, season, and serve!
Optional: Add truffle oil for extra depth of flavour.
4. Sausage & Broccoli Pasta (Hearty & Comforting)
A simple yet flavourful dish that balances the richness of sausage with fresh broccoli.
Ingredients:
- 250g penne or orecchiette
- 2 tbsp olive oil
- 2 sausages, casings removed (Italian or pork)
- 2 cloves garlic, minced
- 2 cups broccoli, chopped
- ½ cup parmesan, grated
- Salt & black pepper, to taste
Method:
1️⃣ Cook pasta until al dente. In the last 2 minutes, add broccoli to the pot to blanch.
2️⃣ Heat olive oil in a pan, crumble in the sausages, and cook until browned.
3️⃣ Add garlic and sauté until fragrant.
4️⃣ Toss in pasta and broccoli, stirring in parmesan and seasoning.
5️⃣ Serve immediately with extra cheese on top.
Optional: Finish with a squeeze of lemon for freshness.
A Few More Simple But Delicious Ideas:
🍅 Cherry Tomato & Basil Pasta – Toss spaghetti with blistered cherry tomatoes, garlic, olive oil, and fresh basil.
🌿 Pesto & Parmesan Pasta – Stir homemade or store-bought pesto through hot pasta with a little reserved water for creaminess.
🧀 Cacio e Pepe – A Roman classic with just pecorino cheese, black pepper, and pasta water. Simple but incredible!
🍤 Garlic Prawn Pasta – Sauté prawns in olive oil, garlic, and chilli flakes, then toss with linguine and fresh parsley.
Simplicity is Key
Great pasta doesn’t have to be complicated. In fact, the best pasta dishes often have only a few ingredients, but they’re high-quality and well-balanced. Whether you’re keeping it vegetarian with garlic & kale, making a quick tuna & caper dish, or craving the comfort of sausage & broccoli, you can’t go wrong.
And if you’re gluten-free? Don’t settle for bad pasta. The options today are so much better than they were a decade ago, and you can enjoy a beautiful, simple pasta dish without compromise.
