Ingredients (serves 4)
For the Fajitas:
- 500g chicken breast or thigh fillets, sliced into strips
- 1 red capsicum, sliced
- 1 yellow capsicum, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp chilli flakes (optional for spice)
- Salt & pepper, to taste
- Juice of 1 lime
For the Paprika Corn:
- 1 cup corn kernels (fresh or frozen)
- 1/2 tsp smoked paprika
- A pinch of salt
To Serve:
- 8 small flour or corn tortillas, warmed
- Fresh coriander, chopped
- Sour cream or Greek yoghurt
- Grated cheese (cheddar or a Mexican blend)
- Salsa or chopped tomatoes
Method
1️⃣ Marinate the Chicken: In a bowl, mix the chicken with 1 tbsp olive oil, smoked paprika, cumin, coriander, garlic powder, onion powder, chilli flakes, salt, and pepper. Let it sit for at least 10 minutes (or longer for more flavour).
2️⃣ Cook the Chicken: Heat a large pan over medium-high heat. Add the chicken and cook for 5–7 minutes, stirring occasionally, until golden and cooked through. Remove from the pan and set aside.
3️⃣ Sauté the Veggies: In the same pan, add the remaining olive oil and toss in the sliced capsicums and red onion. Cook for 3–4 minutes until slightly softened but still crisp.
4️⃣ Make the Paprika Corn: In a separate dry pan over medium heat, add the corn kernels. Let them cook undisturbed for 2–3 minutes to get a slight char, then stir. Sprinkle with smoked paprika and salt, then cook for another minute. Remove from heat.
5️⃣ Combine & Finish: Return the chicken to the pan with the veggies, squeeze over the lime juice, and toss everything together for 1–2 minutes to coat in the juices.
6️⃣ Assemble & Serve: Fill each tortilla with the chicken and veggie mix, then top with the paprika corn, cheese, sour cream, salsa, and fresh coriander. Fold, bite, and enjoy!
