The Freezer Meals That Got Me Through a Tough Week

The Freezer Meals That Got Me Through a Tough Week

Real-life batch-cooked dinners that saved my sanity (and fed the family)

Some weeks are just… a lot.
Between parenting, running a business, and everything else life throws at you—it’s hard to keep up. And when it comes to feeding your family, the last thing you need is extra stress.

Over the past couple of weeks, I’ve been leaning hard on my freezer stash—and honestly, it’s been a lifesaver.

These aren’t fancy meals. They’re nourishing, prepped ahead, and ready to reheat with zero overthinking. Just warm, comforting food that gets everyone fed with minimal effort.

🧊 My Real-Life Freezer Go-Tos (the past few weeks)

🍝 Batch-Cooked Ragu (My Lifesaver)

Made the traditional way—beef, pork, garlic, onion, milk and slow simmered.
I batch this in big portions and freeze it flat. Reheats perfectly and works with pasta, polenta, or even just toast.

🍖 Lamb Ragu with Pappardelle

Deeply comforting and rich. I cook it low and slow when I have the time, then freeze it in generous portions.
Serve with thick ribbons of flat pasta and top with a sprinkle of parmesan. It feels special, even when it’s been a hard day.

🌮 Pre-Made Taco Mix

Seasoned mince with hidden veg, chopped from whatever was in the fridge—zucchini, mushrooms, carrot, capsicum.
Great for tacos, burrito bowls, or even a jacket potato topping. Freezes flat and defrosts quickly.

🥔 Root Veg Mash

Mashed sweet potato, pumpkin, and potato with a touch of olive oil or butter.
Frozen in small tubs for quick defrosting—perfect for midweek dinners with sausages or steaks.

🥩 Mixed Steaks & Lamb Cuts (Pre-Marinated or Seasoned)

Stored raw but ready to go. Sometimes I’ll rub with garlic and rosemary before freezing, or simply label them up for fast decisions.
After a quick defrost they go straight to pan or oven—served with that root mash or a quick salad.

🐟 Frozen Fish en Papillote

Fish fillets (salmon or white fish) wrapped in baking paper with a splash of olive oil, lemon zest, garden veg and herbs.
Frozen raw in packets and baked straight from frozen. A game-changer when I’m too tired to think.

💡 Why This Works

Because when you’re tired or stretched thin, having food ready to go is the difference between takeaway and a real meal.

Your freezer doesn’t just store leftovers—it can hold a little grace for future you.
