Quick, Versatile Meals the Whole Family Will Eat (Yes, Even the Kids)
There’s a reason rice noodles have a permanent home in my pantry — they’re quick to cook, gentle on little tummies, and endlessly versatile. And most importantly? My children love them.
Whether it’s a soup, salad, or san choy bau, rice vermicelli noodles make it easy to throw together something nourishing without fuss. They take less than 5 minutes to soak, don’t need a stove, and go with almost anything you’ve got in the fridge or garden.
Here are some of my favourite ways to turn a humble packet of rice noodles into a full dinner — fast.
🍲 1. Rice Noodle Dumpling Soup with Garden Greens
Boil stock or broth (chicken, veggie, or bone broth) and add:
- A handful of frozen dumplings or fresh wontons
- Chopped garden greens like bok choy, spinach, or silverbeet
- Spring onion, grated carrot, and a dash of tamari
Add soaked rice noodles just before serving. It’s soothing, quick, and full of flavour.
🥗 2. Vietnamese Noodle Salad with Peanuts + Lime Dressing
Finely chop whatever crunchy salad bits you have — think wombok, carrot, cucumber, capsicum, and fresh herbs (mint and coriander are ideal).
Toss with soaked noodles and top with:
- Cooked salmon, chicken, tofu, or a slice of rare beef
- Crushed peanuts
- A simple dressing: lime juice, fish sauce, tamari or soy, honey, and garlic
Light, fresh, and perfect on a warm night.
🥬 3. San Choy Bau with Rice Noodles
Cook up chicken or pork mince with:
- Garlic, ginger, onion, tamari, a splash of fish sauce
- Toss in soaked vermicelli noodles to bulk it out
- Spoon into lettuce cups and top with shredded carrot, cucumber, or sprouts
This is a great way to make one portion of mince go a lot further — and the kids love the crunchy lettuce cups.
🌿 4. Beef or Chicken Mince Vermicelli Salad
This one’s a weeknight winner and a great way to use up herbs from the garden:
- Brown beef or chicken mince with garlic, tamari, and lemongrass if you have it
- Serve over a bed of soaked noodles with chopped cucumber, herbs, and grated veg
- Finish with a drizzle of sesame oil and a squeeze of lime
It’s warm, fresh, and satisfying without being heavy.
🥡 5. Leftover Toss-In Bowl
This one isn’t fancy, but it works:
- Leftover roast veg? Toss it in.
- A boiled egg? Slice on top.
- Random bits of cooked meat? Shred and stir through.
All you need is a dash of soy sauce, sesame oil, or even a little spoon of your favourite peanut butter whisked with hot water and tamari for an instant sauce.

Rice noodles are soft, slurpable, and neutral enough to take on any flavour — and they don’t take forever to chew (a big win at toddler dinner time). Plus, you can cut them easily with scissors for little eaters.
