Some of the best meals are the simplest. A warm flatbread fresh from the pan, topped with juicy chicken skewers and cooling tzatziki, makes a dinner that feels a little special — but comes together with just a few pantry and garden basics.
Making your own flatbreads is easier than you think. No yeast, no proving — just a quick dough, a sprinkle of seeds for crunch, and a hot pan. They’re soft, flexible, and so much better than store-bought.
🌾 Seeded Flatbreads
Ingredients (makes 6–8 flatbreads):
- 2 cups plain flour (swap half for wholemeal if you like)
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup plain yoghurt (or Greek yoghurt)
- 2 tbsp olive oil
- 2 tbsp mixed seeds (sesame, poppy, sunflower, linseed – whatever’s in the pantry)
Method:
- Mix flour, baking powder, and salt in a bowl.
- Stir in yoghurt and olive oil, then knead lightly until a soft dough forms.
- Divide into 6–8 balls. Roll out each into a thin round.
- Sprinkle with seeds and press them in with the rolling pin.
- Cook in a dry hot pan for 1–2 minutes per side until puffed and golden spots appear. Keep warm under a clean tea towel.
🍗 Chicken Souvlaki Skewers
Ingredients:
- 500g chicken breast or thigh, cut into chunks
- 2 tbsp olive oil
- 1 lemon, juiced
- 2 garlic cloves, crushed
- 1 tsp dried oregano
- Salt & pepper
Method:
- Mix oil, lemon juice, garlic, oregano, salt, and pepper.
- Marinate chicken for at least 30 minutes (longer if you can).
- Thread onto skewers and grill, BBQ, or pan-fry until golden and cooked through.
🥒 Tzatziki
Ingredients:
- 1 cup Greek yoghurt
- ½ cucumber, grated and squeezed dry
- 1 garlic clove, crushed
- Juice of ½ lemon
- 1 tbsp olive oil
- Fresh dill or mint, chopped
Method:
- Mix all ingredients together.
- Season with salt and chill until ready to serve.
