Some of the best dinners don’t rely on fresh market runs — they come together from what’s already in your pantry, fridge, or freezer. This speck and broccoli spaghetti is one of those meals: quick, full of flavour, and easy to cook whether you’re at home or off-grid in a caravan.

With a handful of long shelf-life staples (pasta, parmesan, chilli, garlic) and a freezer-friendly vegetable like broccoli, you can have dinner on the table in under 20 minutes.

🍝 Ingredients (Serves 4)

  • 400g spaghetti (or any long pasta)
  • 150g speck or bacon, diced
  • 2 tbsp butter (or olive oil)
  • 3 cloves garlic, finely sliced
  • ½ tsp dried chilli flakes (optional)
  • 300g broccoli (fresh or frozen), chopped into small florets
  • ½ cup grated parmesan cheese (plus extra for serving)
  • Salt & pepper to taste

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook spaghetti until just al dente. Reserve 1 cup of pasta water before draining.
  2. Cook the speck: In a large frying pan, melt butter over medium heat. Add diced speck and cook until golden and slightly crispy.
  3. Flavour base: Add garlic and chilli flakes to the pan and cook for 1 minute until fragrant (don’t let the garlic burn).
  4. Add broccoli: Stir in broccoli florets and cook for 2–3 minutes, adding a splash of pasta water if needed to steam them through.
  5. Combine: Toss in the drained pasta, parmesan, and enough reserved pasta water to coat everything in a silky sauce. Season generously with cracked black pepper.
  6. Serve: Dish into bowls with extra parmesan on top.

💡 Tips & Variations

  • No speck? Use pancetta, bacon, or even tinned tuna as an alternative protein.
  • No broccoli? Swap in frozen peas or green beans.
  • Off-grid tip: Cook pasta, drain, then toss straight into the pan — fewer dishes!
  • Make it creamy: Add a splash of cream or a spoonful of cream cheese for a richer sauce.
