Potato Salad… But Better (And Actually Filling)

Potato salad is one of those dishes that shows up everywhere.

Barbecues, family lunches, leftovers in the fridge.

But it’s often heavy, mayo-based, and ends up feeling more like a side than something that actually satisfies.

This version is a bit different.

It still has everything you want — something hearty, something fresh, something with flavour — but it’s lighter, more balanced, and works just as well as a full meal.


Why This Works

Instead of relying on one heavy base, this version layers a few simple elements together.

Roasted sweet potato gives you warmth and substance.

Eggs add protein and make it more filling.

Greens bring freshness and balance.

Then a few sharper ingredients — like olives, capers, or something lightly pickled — lift the whole thing so it doesn’t feel flat.

It’s still simple, just put together a bit more thoughtfully.


Ingredients (Flexible)

  • 2–3 sweet potatoes, cut into chunks
  • 3–4 eggs, boiled
  • A handful of greens (rocket, spinach, or whatever you have)
  • A small handful of black olives
  • 1–2 teaspoons capers

Optional extras (highly recommended)

  • Quick pickled red onion or radish
  • Chives or the green tops from spring onions
  • Roasted capsicum or leftover veg
  • crispy bacon or chorizo
  • leftover roast chicken,
  • steak or pork
  • toasted pepitas, walnuts or chickpeas for a meat-free crunch
  • perhaps crumbled feta or goat’s cheese

Quick Pickle (Optional but Worth It)

If you don’t love raw onion, this is a simple fix.

Thinly slice red onion or radish and cover with:

  • a splash of vinegar
  • a pinch of salt

Leave it for 10–15 minutes.

It softens the bite and adds a really nice contrast to the rest of the dish.


Dressing

Keep it simple:

  • Olive oil
  • A little mustard or vinegar
  • Salt and pepper

No need for anything heavy — the ingredients do most of the work.


Method

Roast the sweet potato at 180°C until soft and lightly golden.

While that’s cooking, boil your eggs and prepare any extras.

Once everything is ready, layer it up.

Start with the greens, add the warm sweet potato, then the eggs, olives, capers, and anything else you’re using.

Finish with your dressing and a few herbs on top.


What Makes It Different

This isn’t trying to replace potato salad.

It just shifts it slightly.

It’s lighter without feeling like a compromise.

More balanced, but still satisfying.

And it works just as well for a quick dinner as it does on the side of something else.

This is one of those meals you can adjust easily depending on whether you’re serving it for lunch or dinner:

  • For lunch, top with eggs or add leftover chicken or fish.
  • For dinner, serve alongside grilled meat or add crispy bacon or chorizo pieces.
  • Swap sweet potato for regular potatoes.
  • Use whatever greens you’ve got.
  • Add toasted pepitas, walnuts or crispy chickpeas for extra texture.
  • Skip the pickles and keep it simple.
