San Choy Bau: A Versatile and Flavourful Dish

San Choy Bau is a classic Chinese dish that’s as fun to make as it is to eat. Traditionally, it’s made with minced pork or chicken, but you can easily adapt it to use whatever ingredients you have on hand. Ingredients:

  • 500g minced pork or chicken (or any protein of your choice)
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 carrot, finely diced
  • 1 red capsicum, finely diced
  • 1 zucchini, finely diced
  • 1 cup mushrooms, finely diced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • Salt and pepper, to taste
  • Lettuce leaves, for serving
  • Seeds (such as sesame seeds, sunflower seeds, or pumpkin seeds), for sprinkling
  • Peanuts, chopped, for garnish

Instructions:

  1. Heat the vegetable oil in a large frying pan over medium heat. Add the onion, garlic, and ginger, and cook for 2-3 minutes, or until softened.
  2. Add the minced pork or chicken to the pan and cook, breaking it up with a spoon, until browned and cooked through.
  3. Add the carrot, red capsicum, zucchini, and mushrooms to the pan and cook for a further 5-7 minutes, or until the vegetables are tender.
  4. Stir in the soy sauce, oyster sauce, hoisin sauce, sesame oil, and rice vinegar. Cook for another minute, then season with salt and pepper to taste.
  5. To serve, spoon some of the mixture into each lettuce leaf. Sprinkle with seeds and peanuts, and enjoy!

Variations:

  • Add any other vegetables you have on hand, such as corn, peas, or bean sprouts.
  • For a vegetarian version, use tofu instead of meat.
  • Serve with rice or rice noodles on the side for a more filling meal.
