(And why I’m not giving them up any time soon)
If dinner time at your place feels a bit like a scene from a disaster movie — small humans melting down, fridge doors left open, and everyone asking “What’s for dinner?” at the same time — you’re not alone.
Enter the unsung hero of the weeknight kitchen: the humble oven.
🔥 The Beauty of the Oven Dinner
Oven dinners don’t ask much of you.
You toss a few things into a tray, add a splash of oil or sauce, and let the oven take over while you tidy the toys, run a bath, or just sit quietly staring into space for 20 minutes.
It’s cooking that multitasks so you don’t have to.
🥘 What Makes an Oven Dinner a Weeknight Win?
- Hands-off cooking: Unlike stovetop meals, there’s no stirring or standing over a pot.
- Easy clean-up: One tray = less washing up = more time for literally anything else.
- Versatile: Chicken, veg, sausages, fish, chickpeas, meatballs—nearly everything works in the oven.
- Freezer-friendly: Double the tray and freeze one for later.
- Suits your schedule: Start it early if you’re home, or prep it and pop it in the oven as school bags hit the floor.
🥦 What I Love to Throw in the Oven
- A chicken tray bake with root veg and fresh herbs
- Baked meatballs with a garden tomato sauce
- Gnocchi with homemade pesto and a handful of greens
- A pan of roasted chickpeas, pumpkin and feta
- Sausages with apples, onion, and silverbeet (or whatever’s still standing in the garden)
And yes, sometimes I make two trays at once and freeze one. That’s a future dinner sorted, thank you very much.
🧂 Make It Work for You
You don’t need a recipe book. You just need:
✅ One tray
✅ A source of protein
✅ Some veg (fresh or frozen is fine)
✅ Oil + seasoning or sauce
✅ A little time
The oven doesn’t judge if your pumpkin’s a bit soft or the sausages are from the bottom of the freezer. It just cooks, quietly, while you live your life.
