Some dinners are simple, comforting, and crowd-pleasing — especially when they’re packed with flavour and sneak in a few extra veggies. These mini meatloafs are just that: easy to prep, freezer-friendly, and ideal for kids who shy away from “green bits.”

Pair them with roasted sweet potato wedges and you’ve got a nourishing weeknight dinner that’s full of goodness — no complaints, no fuss.

🥕 Hidden Veg Meatloaf Recipe

Makes 8–10 muffin-sized loaves
Double the batch and freeze some for another week

Ingredients

  • 500 g beef or lamb mince
  • 1 carrot, grated
  • 1 zucchini, grated and squeezed of excess liquid
  • 1 small onion, finely diced or grated
  • 1 garlic clove, crushed
  • 1 egg
  • 2 tbsp tomato paste
  • 1/2 cup rolled oats or breadcrumbs
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried mixed herbs
  • Salt and pepper to taste

Optional glaze:

  • 2 tbsp tomato sauce + 1 tsp balsamic vinegar (brush on top before baking)

Method

  1. Preheat oven to 180°C (fan forced).
  2. Mix all ingredients in a large bowl until well combined.
  3. Spoon mixture into lightly greased muffin tins and smooth the tops.
  4. Add glaze if using.
  5. Bake for 20–25 minutes, or until browned and cooked through.
  6. Let cool slightly before removing from tins.

🍠 Simple Sweet Potato Wedges

While the mini meatloafs bake, make a tray of wedges:

  • Slice 2 large sweet potatoes into chunky wedges
  • Toss with olive oil, salt, pepper, and a sprinkle of paprika or cinnamon
  • Roast on a lined tray at 200°C for 30–35 minutes, turning halfway

Crispy outside, soft inside — no need for chips.

  • Freeze cooled, cooked meatloafs in an airtight container
  • Reheat from frozen in the oven or airfryer
  • Great for lunchboxes or quick dinners
