Ingredients
- 500 g beef or lamb mince
- 1 carrot, grated
- 1 zucchini, grated and squeezed of excess liquid
- 1 small onion, finely diced or grated
- 1 garlic clove, crushed
- 1 egg
- 2 tbsp tomato paste
- 1/2 cup rolled oats or breadcrumbs
- 1 tbsp Worcestershire sauce
- 1 tsp dried mixed herbs
- Salt and pepper to taste
Optional glaze:
- 2 tbsp tomato sauce + 1 tsp balsamic vinegar (brush on top before baking)
Method
- Preheat oven to 180°C (fan forced).
- Mix all ingredients in a large bowl until well combined.
- Spoon mixture into lightly greased muffin tins and smooth the tops.
- Add glaze if using.
- Bake for 20–25 minutes, or until browned and cooked through.
- Let cool slightly before removing from tins.
🍠 Simple Sweet Potato Wedges
While the mini meatloafs bake, make a tray of wedges:
- Slice 2 large sweet potatoes into chunky wedges
- Toss with olive oil, salt, pepper, and a sprinkle of paprika or cinnamon
- Roast on a lined tray at 200°C for 30–35 minutes, turning halfway
