Ingredients (Serves 4)

  • 8 lamb cutlets

  • Salt and pepper to taste

For the Veg Traybake:

  • 2 carrots, peeled and chopped into batons

  • A handful of tomatoes (optional)
  • 1 small beetroot, peeled and cubed (optional but lovely for colour)
  • 2 tbsp olive oil
  • Salt and pepper

Method

  1. Preheat oven to 200°C (fan).
  2. Prep the veg: Toss carrots, parsnips, sweet potato, tomatoes and beetroot with olive oil, salt, and pepper. Spread evenly on a large baking tray and roast for 20 minutes.
  3. Make the herb crust: Mix thyme, rosemary, garlic, olive oil, salt, and pepper in a small bowl.
  4. Coat the lamb: Pat lamb cutlets dry and rub with the herb mixture.
  5. Add lamb to the tray: After the veg has cooked for 20 minutes, place the lamb cutlets on top. Roast for a further 12–15 minutes until lamb is cooked to your liking (slightly pink is ideal).
  6. Serve: Plate up lamb alongside the roasted veg, making sure to scoop up any herby pan juices.
