This chickpea & vegetable curry is family-friendly, naturally gut-friendly, and perfect for freezing. Serve it with rice, flatbreads, or even spooned over baked potatoes for a hearty midweek dinner.

- 2 tbsp olive oil or coconut oil
- 1 large onion, diced

- 2 tsp ground coriander
- 1 tsp turmeric
- 1 tsp mild curry powder or garam masala
- 2 x 400g tins chickpeas, drained and rinsed
- 1 x 400g tin diced tomatoes
- 1 x 400ml tin coconut milk
- 2 medium carrots, diced
- 1 zucchini, diced
- 1 capsicum, chopped
- 2 cups spinach or silverbeet, chopped
- Salt & pepper, to taste
- Fresh coriander, to garnish

- Heat oil in a large pot. Add onion and cook until softened.
- Stir in garlic, ginger, and spices. Cook for 1–2 minutes until fragrant.
- Add chickpeas, tomatoes, coconut milk, and diced vegetables (carrot, zucchini, capsicum).
- Simmer for 20–25 minutes until vegetables are tender and curry thickens.
- Stir in spinach or silverbeet just before serving.
- Season to taste and garnish with fresh coriander.
