Bitsa Fried Rice Recipe

Ingredients

  • 3 cups cooked cold rice
  • 1 cup leftover roast lamb, chopped
  • 1 cup frozen prawns
  • 2 cups frozen stir-fry vegetables
  • 1 carrot, grated or finely sliced
  • 1 cup peas
  • 2–3 eggs
  • 2 cloves garlic, crushed
  • 2–3 tbsp soy sauce
  • 1 tsp sesame oil
  • Oil for cooking
  • Shallots, herbs or chilli to serve

Method

  1. Heat a large wok or frying pan over high heat with a little oil.
  2. Add the lamb and prawns and cook until heated through and lightly golden.
  3. Toss in the frozen vegetables, peas, carrot and garlic. Stir fry for several minutes until everything softens slightly but still has colour and texture.
  4. Push everything to one side of the pan and crack in the eggs. Scramble gently before mixing through.
  5. Add the cold rice and break it apart with your spoon.
  6. Pour over soy sauce and sesame oil, tossing everything together until hot and evenly coated.
  7. Top with shallots, herbs or a little chilli if you like heat.

Serve straight from the wok.

Preferably while standing at the kitchen bench wondering why the simple meals are always the best ones.
