Easy Bone Broth Chicken Soup with Dumplings (Bitsa Style)

  • 1–2 cups mixed vegetables (e.g. bok choy, spinach, mushrooms, carrots)
  • 2 cloves garlic, finely chopped
  • 1 small piece ginger, grated
  • 1–2 tbsp soy sauce
  • 1 tsp sesame oil

Optional:

  • spring onions
  • fresh herbs
  • chilli oil

Method

In a large pot, gently heat a little oil and sauté the garlic and ginger for a minute or two until fragrant.

Pour in the bone broth and water, then bring to a gentle simmer.

Add your vegetables and cook for a few minutes until just softened.

Add the dumplings directly into the broth and cook according to packet instructions, usually 4–6 minutes.

If using tofu, add it in towards the end to warm through.

Finish with soy sauce and sesame oil, adjusting to taste.

Serve hot with spring onions or a drizzle of chilli oil if you like.


Making It Your Own

This is a very forgiving recipe.

  • swap tofu for leftover chicken
