Hearty Sausage Roll with Beef and Capsicum Filling

Sausage rolls are a classic British snack, perfect for picnics, parties, or a tasty treat any time of the day. This recipe takes the traditional sausage roll up a notch by adding flavourful beef, sweet roasted capsicums, and milk-soaked breadcrumbs for a deliciously moist and hearty filling.

Ingredients:

  • 500g beef mince
  • 1 red capsicum, roasted and finely chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1/4 cup milk
  • 1/2 cup breadcrumbs
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried mixed herbs
  • Salt and pepper, to taste
  • 1 pack of puff pastry (ready-rolled sheets)
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Prepare the Filling: In a large bowl, combine the beef mince, roasted capsicum, onion, garlic, tomato paste, Worcestershire sauce, dried herbs, salt, and pepper. Mix well to combine.
  2. Soak the Breadcrumbs: In a small bowl, soak the breadcrumbs in the milk for a few minutes, until the breadcrumbs have absorbed the milk and softened. Add the breadcrumb mixture to the beef mixture and mix until well combined.
  3. Assemble the Sausage Rolls: Preheat the oven to 200°C (390°F). Cut the puff pastry sheets in half lengthways to make two long strips. Spoon the beef mixture along the length of each pastry strip, then roll up the pastry to enclose the filling. Brush the edges with a little beaten egg to seal.
  4. Bake the Sausage Rolls: Place the sausage rolls on a baking tray lined with baking paper, seam side down. Brush the tops with the remaining beaten egg. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and cooked through.
  5. Serve and Enjoy: Allow the sausage rolls to cool slightly before serving. They can be enjoyed warm or at room temperature, and are delicious on their own or with your favorite sauce or chutney.
