Ingredients

  • 500g pork mince
  • 1 large carrot, grated
  • 1 zucchini, grated
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 egg, beaten (plus 1 extra for egg wash)
  • 1 tablespoon tomato ketchup
  • 1 teaspoon dried mixed herbs
  • Salt and pepper, to taste
  • 3 sheets of ready-rolled puff pastry
  • Sesame seeds, for sprinkling

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 200°C (180°C fan-forced). Line a baking tray with baking paper.
  2. Prepare the Filling:
    • In a large bowl, combine the pork mince, grated carrot, grated zucchini, chopped onion, minced garlic, breadcrumbs, beaten egg, tomato ketchup, dried mixed herbs, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. Prepare the Pastry:
    • Lay out the sheets of puff pastry on a clean surface. Cut each sheet in half lengthwise to create two long rectangles from each sheet.
  4. Assemble the Sausage Rolls:
    • Divide the pork and veggie mixture into six equal portions. Shape each portion into a long log and place it along the centre of each pastry rectangle.
    • Brush one long edge of the pastry with a little beaten egg. Fold the other side over the filling to enclose it and press to seal. Repeat with the remaining pastry and filling.
  5. Cut and Egg Wash:
    • Cut each long roll into smaller sausage rolls, about 5cm in length, or to your desired size.
    • Place the sausage rolls on the prepared baking tray, seam side down. Brush the tops with the remaining beaten egg and sprinkle with sesame seeds.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the filling is cooked through.
  7. Serve:
    • Allow the sausage rolls to cool slightly before serving. They can be enjoyed warm or cold, making them perfect for any occasion.

  • Veggie Variations: Feel free to experiment with other vegetables such as finely chopped spinach, sweetcorn, or bell peppers to add more variety and nutrition.
