  • 2 kg (about 4.4 lbs) beef bones (marrow bones, knuckle bones, and oxtail)
  • 2 medium carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 large onion, quartered
  • 4 cloves garlic, smashed
  • 2 tablespoons apple cider vinegar
  • 1 bay leaf
  • 1 tablespoon peppercorns
  • Fresh parsley (optional)
  • Salt, to taste
  • Water

Method 1: Pressure Cooker/Instant Pot

  1. Prepare the Bones:
    • Preheat your oven to 200°C (400°F).
    • Place the beef bones on a baking sheet and roast for 30 minutes until they are browned. This step enhances the flavour of the broth.
  2. Pressure Cooking:
    • Transfer the roasted bones to the pressure cooker.
    • Add the carrots, celery, onion, garlic, apple cider vinegar, bay leaf, peppercorns, and a handful of fresh parsley if using.
    • Fill the pressure cooker with water until it covers the bones and vegetables, leaving about an inch of space from the top.
    • Lock the lid in place and set the pressure cooker to high pressure. Cook for 2 hours.
  3. Strain the Broth:
    • Allow the pressure to release naturally, then strain the broth through a fine mesh sieve into a large bowl or pot. Discard the solids.
    • Season with salt to taste.
    • Let the broth cool, then refrigerate. Once chilled, remove the layer of fat that solidifies on top.
  4. Storage:
    • Store the broth in airtight containers in the refrigerator for up to 5 days or freeze for up to 3 months.

Method 2: Cooking on the Hob

  1. Prepare the Bones:
    • Preheat your oven to 200°C (400°F).
    • Place the beef bones on a baking sheet and roast for 30 minutes until they are browned.
  2. Simmering on the Hob:
    • Transfer the roasted bones to a large pot.
    • Add the carrots, celery, onion, garlic, apple cider vinegar, bay leaf, peppercorns, and a handful of fresh parsley if using.
    • Fill the pot with water until it covers the bones and vegetables.
    • Bring to a boil, then reduce to a gentle simmer.
    • Simmer for 12-24 hours, occasionally skimming off any foam or fat that rises to the surface.
  3. Strain the Broth:
    • Strain the broth through a fine mesh sieve into a large bowl or pot. Discard the solids.
    • Season with salt to taste.
    • Let the broth cool, then refrigerate. Once chilled, remove the layer of fat that solidifies on top.
  4. Storage:
    • Store the broth in airtight containers in the refrigerator for up to 5 days or freeze for up to 3 months.
