Batch Cooking: How to Prep 4 Dinners in Under an Hour

“Dinner’s half-done before Monday even begins.”

Weeknights can be chaos — especially when you’re juggling school pickups, homework, toddler moods and figuring out what’s for dinner… again.

This week’s Meal Prep Sunday focuses on speed prep using overlapping ingredients to set yourself up for four different meals, all prepped in under an hour. You won’t be cooking full dinners start-to-finish — just prepping the bits that save the most time when life is busy.

Think of it as giving yourself four shortcuts — so meals come together in minutes later in the week.


🔁 Why Use Overlapping Ingredients?

Choosing 2–3 ingredients that work across multiple meals helps you:
✔️ Save time
✔️ Reduce waste
✔️ Avoid repetitive meals
✔️ Stay out of the takeaway trap


🥩 Example: 1 Hour = 4 Dinner Starters

Here’s one of my go-to prep combos that works for most seasons and family appetites.


🥘 1. Mince Base – for Cottage Pie, Taco Mix & San Choy Bau

  • Brown 1kg beef, lamb or pork mince with onion and garlic
  • Divide into three:
    → Add herbs, grated carrot and peas = cottage pie base
    → Add taco spices = taco night ready
    → Add tamari, ginger, and chopped veg = san choy bau filling

🧊 Store each in containers or freeze until needed.


🍠 2. Roasted Veg Tray – for Frittata & Wraps

  • Chop a tray of zucchini, sweet potato, red capsicum, and onion
  • Roast with olive oil and dried herbs
    → Half goes into a quick frittata with eggs and feta
    → Half becomes a wrap filling with hummus or leftover grains

🍳 3. Cooked Rice (or Cauliflower Rice) – for Fried Rice & Side Dishes

  • Cook a pot of brown rice or prepare cauliflower rice
    → Toss with egg, frozen peas, spring onion and tamari = egg fried rice
    → Use plain as a side for taco night or san choy bau

Make extra if you’ve got growing kids or want leftovers for lunches.


🧄 4. Basic Dressing or Drizzle

Whisk together:

  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tsp garlic
  • 2 tbsp olive oil

Perfect on roasted veg, wraps, bowls, or even spooned over frittata for an extra flavour hit.


⏳ The One-Hour Flow:

  1. Preheat oven and get veg roasting first
  2. Start browning the mince while rice/cauli rice cooks
  3. Whip up your dressing and prep containers
  4. Cool, portion, label — and you’re done

💡 Bonus Tips:

  • Double the mince for extra freezer meals
  • Roast two trays if you’ve got teens or lunchboxes to fill
  • Boil some eggs at the same time for lunch add-ons

🧡 Real-Life Prep, Not Instagram Perfection

You don’t need a full freezer of pre-labelled tubs to feel in control. Sometimes just starting the meal is enough to make your evenings feel calmer, quicker, and more intentional.

And that’s a win before Monday even begins.
